Ingredients: 1 red onion (medium size) very thinly sliced 2 tablespoons red wine vinegar 2 ripe avocados juice of one lime 1/4 large watermelon juice of one orange 1 teaspoons olive oil 1 cup cilantro sprigs loosely packed salt and fresh ground pepper
Intstructions: 1st) in a small bowl put the sliced onion and the vinegar and let sit at least 2 hours if not overnight....
2nd) in a small bowl cube the avocado and toss with the lime juice, set aside
3rd) in a very large bowl cube or chunk the watermelon in about inch or inch and a half pieces
then . . toss together the watermelon the avocado, olive oil, and cilantro . . . then drain the onion and mix it in the salad . . . salt and pepper to taste and enjoy!
