Gaining/Adjusting Stats (STR - DEX - INT)
You can gain an unlimited amount of stat points per day, with no fixed intervals between the gains. You can toggle each Stat to be able to raise (move up) or to drop (move down) or to be locked.
The 'Skills' you can choose and train each have a 'Primary' and a 'Secondary' Stat associated with them. If both Stats associated with a skill are set to raise, the primary Stat will increase 75% of the time, while secondary Stat will increase 25% of the time. If the primary Stat associated with a skill is locked, however, the secondary Stat will be chosen to raise.
To gain in a particular Stat you should train the appropriate skills.

Fast Track Stat Gains:
This is probably the fastest way to set up your STR, DEX, and INT but to use it you must first Max out your skills to the 1200 skill point cap.
Your new character will need to get enough gold to purchase 1200 skill points from Non Player Characters (NPCs). You will need about 12,000 gold if you are buying the full 12,000 skill points. You could get the gold by sheering some sheep and selling the wool or picking flax and selling it to the NPC vendors. If your character is partially developed you may also be able to kill monsters and take their gold for your training.
Once you have the gold you need, find every type of NPC around you and say "<npc's name> teach" so they give you a list of things. Then say "<npc's name> teach <skill>", skill obviously being a skill they said they could teach you. Go around and learn everything using the gold you have until your skills are maxed out at 1200.
NOTE:
These are the best skills to use to gain each Stat:
STR - Mining/Herding
DEX - Herding/Snooping
INT - Herding/SpiritSpeaking
Be sure not to learn any Mining, Herding, Snooping, or Spirit Speaking. Make sure those four are 'Locked' at zero.
Now . . Here is the formula:
1) Lock every skill you have and then choose one that you are not going to use but have at least 10 (real skill) and set it to go down.
2) Go to an weapons dealer and buy a crook and a pick axe.
3) Set the Herding skill to go up. Go out looking for animals. Double click the Crook and select an animal. Once you do this, it will ask you to chose a location, just select the same animal.
4) Repeat this until you have around 10 points of Herding.
5) Now . . Lock the skill you had set to go down
6) Turn the Herding skill to go down
7) Set Mining to go up and go do some mining (toss the refuse on the ground).
8) Once mining is at 10, set it to go down and then set Herding to go up.
9) Do herding again.
10) Repeat this toggling process until you get to the desired STR and INT.
11) Lock them when you reach your desired goal.
12) Once your STR and INT are in place, if you are still short on DEX, start the same process except with use Herding and Snooping instead of Mining.
The reason this is the fastest is because Herding and Mining have no delay between uses except for the standard 'UseItem' delay. Any skill with a delay (that may gain faster) will in the end be slower than this method due to the fewer amount of attempts you can make with the lack of delay.
Always start with STR first, because INT is the slowest to gain. Mining, Herding, and Snooping have no delay. SpiritSpeaking does.
We know this works, because people have maxed as many as 3 characters in 4 hours using this method and a Razor 'Hot Key' set for 'use last skill'.
